Which fields are actually required?

Business name, city, and phone number. Everything else — street address, hours, price range, service area — is optional and only appears in the output if you fill it in.

What's the openingHours format?

Use schema.org shorthand, comma-separated for multiple ranges — for example: Mo-Fr 09:00-18:00, Sa 10:00-14:00. Leave it blank if your hours vary or you'd rather not publish them.

Does this replace setting up Google Business Profile?

No. This is schema markup for your website — a separate, complementary signal to your GBP listing, not a substitute for it. The two should have matching name, address, and phone details.
